silken rice pudding
This recipe is from the Silk website. Silk is a soy milk that comes in nut and coconut flavors, I love their products. Just went in search of a rice pudding to make with their milks. I'm keeping this one handy as DH is a major rice pudding fan and I know that I'll make it fairly often.

Ingredients For silken rice pudding

2 1/2 c(600 ml) silk, any flavour except chocolate

1/3 c(75 ml) short grain white rice or arborio rice

1 pinchsalt

1egg
-
1 tsp(5 ml) vanilla

1/2 tsp(2 ml) cinnamon

2 Tbsp(30 ml) maple syrup, brown sugar or honey

1/2 c(125 ml) plump raisins, if desired
How To Make silken rice pudding

1In a medium saucepan, bring Silk, rice and salt to a boil over medium-high heat.

2Reduce heat to low and simmer uncovered until rice is cooked through, about 25-30 minutes.

3In a small bowl, beat egg until well combined. Whisk in a ladle of hot rice mixture into beaten egg.

4Add egg mixture back into saucepan and stir over low heat until thickened, about 10-12 minutes.

5Remove from heat and stir in vanilla, cinnamon, sweetener and raisins, if using. Serve warm or cold.

6Garnish as and if desired. Optional
