After all these years, I finally got this recipe from my mother in-law.
It's actually a combination of the best parts of two recipes.

Enjoy!

1 Hr 30 Min
Method:
Bake

Ingredients

1/2 c
rice, long grain uncooked
2
eggs
1/2 c
sugar
1/2 tsp
salt
2 c
milk
1 tsp
vanilla
nutmeg, for garnish

Step-By-Step

1Wash rice and drain thoroughly.
Cook according to package directions, making sure all water is absorbed and the rice is tender.
2Beat eggs slightly, add sugar, vanilla, and salt. Stir in milk.
Add cooked rice.
Turn into a 1 quart baking dish.
Sprinkle the top lightly with nutmeg.
3Place baking dish into a larger dish with 1 inch of water.
(a water bath)
This keeps the rice from burning on the bottom.
4Bake at 325 degrees, for 1 1/2 to 2 hours.
