This dessert is very light and is absolutely delicious, especially if served with ginger snaps! It will provide 10-12 servings.

Ingredients

1 box
(large) instant vanilla pudding
3 c
milk (i use skim)
1 can(s)
(small) pumpkin
12 oz
cool whip (i use light)
1 tsp
pumpkin pie spice

Step-By-Step

1Prepare pudding as directed on package. Let sit for a few minutes.
2Whisk in the pumpkin and pumpkin pie spice.
3Fold in the Cool Whip.
4Refrigerate.
