Ingredients For eggnog pudding

  • 1/4 c
    all purpose flour
  • 1 Tbsp
    cornstarch
  • 1 c
    sugar
  • 2 1/2 c
    milk
  • 1/2 c
    rum or bourbon
  • 2 x lg
    eggs, seperated
  • 1 Tbsp
    butter
  • 1 Tbsp
    pure vanilla extract
  • 2 x lg
    egg whites, stiffly beaten
  • GARNISH:
  • cool whip free
  • nutmeg

How To Make eggnog pudding

    In a medium saucepan, combine flour, cornstarch & sugar; stir well. Add 1/2 C milk & stir until smooth.

    In another saucepan, scald remaining milk (to just below boiling point); add to flour mixture. Cook & stir over medium heat (DO NOT ALLOW TO BOIL).

    In a small bowl, beat yolks. Remove 1/2 C hot mixture & add to the yolks (tempering); mix well & return to the saucepan. Continue to cook over low heat ; 2 - 3 minutes.

    Remove from heat & stir in butter, extract & rum.

    Beat egg whites until stiff but not dry. Fold in egg whites into hot mixture thoroughly.

    Divide amoung desert dishes & chill for at least 4 hours.

    Before serving, place a dollop of cool whip & sprinkling of nutmeg on top.
