Ingredients For eggnog pudding

1/4 call purpose flour
-
1 Tbspcornstarch
-
1 csugar
-
2 1/2 cmilk
-
1/2 crum or bourbon
-
2 x lgeggs, seperated
-
1 Tbspbutter
-
1 Tbsppure vanilla extract
-
2 x lgegg whites, stiffly beaten
- GARNISH:
-
cool whip free
-
nutmeg
How To Make eggnog pudding

1In a medium saucepan, combine flour, cornstarch & sugar; stir well. Add 1/2 C milk & stir until smooth.

2In another saucepan, scald remaining milk (to just below boiling point); add to flour mixture. Cook & stir over medium heat (DO NOT ALLOW TO BOIL).

3In a small bowl, beat yolks. Remove 1/2 C hot mixture & add to the yolks (tempering); mix well & return to the saucepan. Continue to cook over low heat ; 2 - 3 minutes.

4Remove from heat & stir in butter, extract & rum.

5Beat egg whites until stiff but not dry. Fold in egg whites into hot mixture thoroughly.

6Divide amoung desert dishes & chill for at least 4 hours.

7Before serving, place a dollop of cool whip & sprinkling of nutmeg on top.
