Diabetic Rice Pudding

Ingredients

1-1/2 c
water
1/2 c
rice
1 c
skim milk
3 Tbsp
splenda
2 tsp
cornstarch or flour
1 tsp
vanilla flavoring
nutmeg or cinnamon (optional)

Step-By-Step

1Combine water and rice in saucepan. Bring to a boil. Reduce heat to simmer. Cover and cook until rice is tender, about 25 minutes. Add milk.
2Combine Splenda and cornstarch. Slowly stir in rice mixture. Bring to boil. Boil gently to thicken, about 2 minutes.
3Remove from heat. Add flavoring. Sprinkle with cinnamon or nutmeg, if you'd like. Makes 4 (1/2 cup) servings.
