Ingredients For cranberry raisin bread pudding

  • 8 thick slice
    cinnamon raisin bread
  • butter
  • 1/2 c
    cranberries, dried
  • 1 c
    milk
  • 3 lg
    eggs
  • 1/4 c
    sugar
  • 2 c
    oikos honey greek yogurt, divided
  • 1 1/2 tsp
    orange zest
  • 1/2 tsp
    cinnamon
  • 1/4 tsp
    freshly grated nutmeg
  • 1 tsp
    pure vanilla extract

How To Make cranberry raisin bread pudding

    Lightly grease an 8" square baking dish with butter or non-stick cooking spray. Cut the crust off the bread slices, then butter each side. Cut each slice in 1/2 & layer the bread in the baking dish. Sprinkle with dried cranberries.

    Whisk together milk, eggs, sugar, 1 C yogurt, zest, cinnamon, nutmeg & vanilla. Pour the custard mixture over bread slices & let stand for at least 1 hour before baking.

    Preheat oven to 250 dergees F.

    Bake for 50 - 60 minutes or until a toothpick inserted in the middle comes out clean. Serve remaining yogurt over warm bread pudding.
