Ingredients For tomato pie

1refrigerated pie crust (bottom only)

1 1/2 lbtomatoes, chopped
-
1 lgvidalia onion, chopped
-
1/2 tspbasil, dried
-
2 cthree cheese blend with a touch of cream cheese
-
4 Tbspmayonnaise
-
1 Tbspolive oil, extra virgin
How To Make tomato pie

1Preheat oven to 350 degrees F.

2Line a 9" pie plate with pie crust as directed on package for bottom crust only. Pierce bottom & sides with fork. Bake 12 - 14 minutes or until edge begins to brown.

3Meanwhile place tomatoes over colander set over bowl or sink; press tomatoes with back of spoon to release juices; discard juice.

4Sprinkle onion on bottom of crust; top with tomatoes & basil. Combine cheese, mayo & olive oil; spoon over tomatoes to 1/2" of edge. Sprinkle with additional basil.

5Bake 30 - 32 minutes or until heated through & crust is golden brown.

6CAUTION: As the pie sets, the liquid from the tomato filling will soften the crust.
