Ingredients For tomato pie

  • 1
    refrigerated pie crust (bottom only)
  • 1 1/2 lb
    tomatoes, chopped
  • 1 lg
    vidalia onion, chopped
  • 1/2 tsp
    basil, dried
  • 2 c
    three cheese blend with a touch of cream cheese
  • 4 Tbsp
    mayonnaise
  • 1 Tbsp
    olive oil, extra virgin

How To Make tomato pie

    Preheat oven to 350 degrees F.
  • 2
    Line a 9" pie plate with pie crust as directed on package for bottom crust only. Pierce bottom & sides with fork. Bake 12 - 14 minutes or until edge begins to brown.

    Meanwhile place tomatoes over colander set over bowl or sink; press tomatoes with back of spoon to release juices; discard juice.

    Sprinkle onion on bottom of crust; top with tomatoes & basil. Combine cheese, mayo & olive oil; spoon over tomatoes to 1/2" of edge. Sprinkle with additional basil.

    Bake 30 - 32 minutes or until heated through & crust is golden brown.

    CAUTION: As the pie sets, the liquid from the tomato filling will soften the crust.
