Sweet Potato Pie

This is the best recipe! I was my great grandmother's. However, if you don't want to cook the sweet potatoes from scratch, use canned sweet potatoes and mash them. of course we top it with whipped cream!

Ingredients

2 c
sweet potatoes, peeled, cooked and mashed.
2
eggs, slightly beaten
1 c
brown sugar, firmly packed
2 tsp
pumpkin pie spice
1 can(s)
evaporated milk
1 c
pecans, finely chopped
1
pie crust, 9
1/4 c
sugar cinnamon mixture
1 c
pecans, roughly chopped

Step-By-Step

1Preheat oven to 425°
2Add each ingredient in order shown into mixing bowl. Mix thoroughly after each addition. Pour into pie crust (do not pre-bake).
3bake at 425° for 15 minutes. Reduce oven to 350° for an additional 40 minutes. Top pie with rough chopped pecans, cinnamon and sugar mixture then bake for an additional 5 minutes or until inserted knife comes out clean.
