Sweet Cottage Cheesecake with strawberry sauce

Ingredients

1 lb
whole-milk cottage cheese
1/2 c
sugar
1/8 tsp
salt
3
eggs
2/3 c
whole milk
1 tsp
vanilla extract
1/4 tsp
nutmeg, freshly grated
1
prepared chocolate graham cracker pie crust
fresh strawberries for garnish

STRAWBERRY SAUCE

1/2 c
sugar
1 Tbsp
cornstarch
2 c
sliced fresh strawberries
1/2 c
water

Directions Step-By-Step

Place oven rack in middle position and preheat oven to 350 degrees.

In the mixing bowl of a food processor, add together the cottage cheese, sugar, salt, eggs, milk, vanilla and nutmeg. Pulse on and off until the mixture is smooth. Pour mixture into prepared pie crust and place on a cookie sheet and into the oven. Bake until the filling is puffed and golden and lightly set--about one hour.

Remove from oven and cool on a rack until just warm--about 30 minutes. To serve immediately, sto with strawberry sauce and serve. OR, refrigerate at this point and add strawberry sauce just before serving.

STRAWBERRY SAUCE: In a saucepan, stir together 1/2 cup sugar, 1 T. cornstarch, 2 cups sliced fresh strawberries and 1/2 cup water. Cook and stir on medium heat until mixture thickens and bubbles. Then cook 2 minutes more. Remove from heat and cool. Yield about 1 1/2 cups.
