Ricotta Pie

My friend Sue gave me this recipe many years ago. It is so simple and oh so good.
Sue uses a Mrs. Smith's frozen, deep dish pie shell for this pie. Of course you may use your own home made crust if you wish.

Ingredients

1
mrs. smith's frozen deep dish pie shell
2 lb
ricotta cheese
3/4 c
sugar
3
eggs
2 tsp
anise or almond extract (i've always used almond)

Step-By-Step

1Warm the frozen pie shell in oven until "dry".
2Mix all ingredients well.
3Pour into pie shell.
4Bake for 1 1/4 hours at 350 degrees.
5Remove from oven and allow to cool.
6Refrigerate until chilled.
