2 Tbsp cornstarch
1 c water
3 oz box strawberry gelatin
1 lb fresh strawberries
9" pie shell, baked

Bea's Notes:

Back in the 80's I used to pic strawberries at Driver Strawberry Farms. One year they sold strawberry recipe books for a buck. It's called 100+Adventures In Strawberries. This is one of the recipes that I have made countless times.

This is very similar to Shoney's Strawberry Pie. They have closed most of the Shoney's restaurants in my area but there are some still in business. I wonder if they still serve their famous strawberry pie.

 

Directions

Bake empty pie crust and cool completely. Wash, remove stems and slice the strawberries the desired size you want and set aside. Combine sugar, cornstarch and water. Bring to a rolling boil and then remove from heat. Cool for 10-15 minutes and then add in the gelatin and mix well.

Place the sliced strawberries into the baked pie shell. Pour the gelatin mixture on top of the strawberries and refrigerate until congealed.

Once the pie has been refrigerated for several hours cover with whipped cream or cool whip and keep refrigerated. This, of course, is optional. You can also put the topping on each individual slice once you plate it up. It's good without a topping.

Bea I picked strawberries to and it's hard work isn't it? Your pie looks delicious and when we start getting fresh one's here I'll make your pie. Makes me want it right now looks so good.

I love this pie the strawberry jello gives this pie the best strawberry flavor.Thanks for the reminder. We had 4 long rows of strawberries when I was growing up- we ate a lot of berries. Hugs,Pat

Yummy Bea and will be making before I can't cook. The strawberries are fresh now so should be very easy to get some around here. Thanks for sharing

Looks wonderful, Bea. Does that gelatin and cornstarch mix make a glaze similar to Shoney's strawberry pie? I love that stuff!

Sounds yummy, this just reminded me of my grandmas fresh strawberry or raspberry pie I haven't made in ages but may have to make it again soon.

Sounds divine Bea!!! I have some strawberry plants this year but they haven't done anything...:( I'll have to get me some fresh strawberries soon and give this a whirl!! Thanks for sharing!
