Recipe From The Dark Side Raisin Pie

I got this recipe from a good friend that was a pie baker, unfortunately she pass away, I always think of her when I make this pie, the reason I call it From the Dark side is because every time she made it I would say it looks like something from the dark side , she would always laugh.

Ingredients

2 c
rasins
2 c
water
1 c
brown sugar
2 Tbsp
corn starch
1/2 tsp
orange zest
1/2
orange juice, fresh
1/2 tsp
lemon zest, grated
2 tsp
lemon juice
1/2 c
chopped nuts
crust for 2 crust pie

Step-By-Step

1Put raisins in a colander pour boiling water over saving water. you should have 1 1/3 cups of water saved.

2In a large bowl add brown sugar, corn starch, orange zest, lemon zest, stir together. Add orange juice, lemon juice and the 1 13 cup of saved water. Mix all together.

3Pour over raisins add nuts and mix well, pour into bottom pie crust dot with 1 tablespoon butter, cover with top crust, cut vents, flute edges, sprinkle with a little sugar.

4Bake in 375 degree oven about 45 minutes.
