Ellen's Notes:

Ever have extra apples on hand and wonder what to do with them? You're bored with apple pie, apple salad, etc. How about some apple fritters? A welcome change from the same ol', same ol'.

Directions

1
In a large bowl, combine the beaten egg, milk, sugar, cinnamon and sour cream. Mix well and add the flour.
2
Heat 2 Tbsp. oil in a large skillet to 375 degrees F. Dip the apples in batter and place in hot oil. Cook for 1 to 2 minutes. Turn and cook another 1 to 2 minutes.
3
Remove fritters and drain. Sprinkle with powdered sugar and serve warm. Enjoy!

I wasn't sure what self rising flour was, so I looked it up and found this make-it-yourself recipe:

1 c. flour
1/2 tsp. salt
1 1/2 tsp. baking powder

Now this recipe is even handier for those of us without self rising flour on hand. ;)

Looks great, by the way...and I was impressed that I don't actually have to have a pan full of oil to deep-fry these!
Thanks for sharing!

You're welcome, CC, and thanks for the tip on the flour. It's the baking powder in it that makes the fritters puff up.

Tried these tonight! Just a tip: I don't normally peel my apples in most desserts...but that was a mistake with this one. I think it doesn't cook long enough to make the peel really soft. Better without peel, I think.
