Put the 3 yellows in a bowl, add 3 Table spoons cornstarch, 3 tablespoons of flour, and a 1/2 cup of water together... Mix till there are no lumps left.. If you think there are you can always put it through a sift.
When if is smooth... add to the ingredients on the stove, and stir till it thickens.
Let it simmer about 3 min on LOW....
Take the mixture off of the stove and FOLD in the eggwhite..
DO NOT PUT BACK ON STOVE. THE HEAT OF THE MIXTURE WILL COOK THE EGG WHITES.
Pour in two 8 inch Graham cracker crusts, or a 10 inch pan. Pour the mixture in the crusts, and shake cinnamon lightly over the top and let cool in fridge.
