I call these "lazy girl" pecan pie bars. Bring these to a gathering, and you'll never have leftovers. Which, in my opinion, is not always a good thing. Make sure to keep some for yourself, or you might miss out!

These pecan pie bars have all the flavors of pecan pie but can be made in a snap. The base is a delicious shortbread cookie crust. Then there is a gooey and sweet topping filled with chopped pecans. Simple to make, this recipe is an easy way to enjoy the flavors of pecan pie.

Ingredients For lazy girl pecan pie bars

  • CRUST
  • 3 c
    all-purpose flour
  • 1/2 c
    granulated sugar
  • 2 stick
    butter
  • 1/2 tsp
    salt
  • PECAN PIE BAR FILLING
  • 4 lg
    eggs
  • 1 1/2 c
    light corn syrup
  • 3/4 c
    granulated sugar
  • 3/4 c
    brown sugar, firmly packed
  • 3 Tbsp
    butter, melted
  • 1 1/2 tsp
    vanilla extract
  • 2 1/2 c
    pecans, in pieces

How To Make lazy girl pecan pie bars

  • Flour, sugar, salt, and butter in a  bowl.

    Preheat oven to 350 degrees. In a large bowl or standing mixer combine the flour, 1/2 cup sugar, 1/2 tsp salt, and 2 sticks of butter. Mix well. The mixture will be dry and crumbly.
  • Mixture pressed into a baking pan.

    In a large pan, preferably 10x15, grease the bottom of the pan or I prefer to use parchment paper to line. Pour the crust mixture onto the greased pan and press firmly to create a crust. Bake in the oven for 10 minutes at 350 degrees.
  • Eggs, corn syrup, sugar, butter, vanilla extract, and pecans in a bowl.

    In a separate bowl, or standing mixer with bowl, combine eggs, corn syrup, sugar, brown sugar, melted butter, vanilla extract, and chopped pecans; mix well. Set aside until the crust is done baking.
  • Baked crust on the counter.

    After 10 minutes, remove the crust from the oven.
  • Pecan pie filling spread over the crust.

    Pour the prepared pecan filling mixture on top of the hot crust. Use a spatula or spoon to distribute evenly.
  • Pecan pie bars back in the oven to bake.

    Place back in the oven. Bake for 35 minutes at 350 degrees.
  • Pecan Pie Bars cooling.

    Let cool and serve.
