PARTY MILLIONAIRE PIE

This is a version of the Furr's Cafeteria Millionaire Pie that my mother got when staying in a campground in Arizona with the "Snowbirds" many years ago. It is the best version I have tried and I think it is because of the unusual pie crust.

Ingredients

3
egg whites
1 c
granulated sugar
1/2 tsp
salt
1 tsp
vanilla
21
ritz crackers
2/3 c
chopped pecans
8 oz
cream cheese
2 c
powdered sugar
1 c
whipping cream
1 can(s)
(small) crushed pineapple, well drained
1/2 c
chopped pecans

Step-By-Step

1Beat egg shites until stiff, adding granulated sugar gradually, along with salt and vanilla.
2Crush crackers and fold into egg white mixture. Add 2/3 cup pecans.
3Shape into a 10 inch pie plate. Bake at 350 degrees for thirty minutes.
4Beat cream cheese and powdered sugar until creamy. Fold in the cream, whipped until stiff.
5Fold in well drained pineapple and remaining chopped pecans. Spread filling on cooled crust.
6Refrigerate pie until serving time.
7Whipped topping like Cool Whip can be substituted for the whipped cream, but I prefer the cream.
