As most know I love Sweet Potatoes and can't remember not having them around. Sweet Potato Pies are cooked several different ways with several different ingredients. However, I am posting a favorite. This makes 2 pies...ENJOY
Combine sweet potatoes and butter, mix well. Add sugar, flour and spices, mix well again. Blend in eggs and milks, mix well again. Pour evenly into two 9" pie shells. Bake at 425 degrees F. Oven for 10 minutes. Reduce oven temperature to 350 degrees and cook for 1 hour.
NOTE: I FIND IT HELPS TO FILL THE PIE SHELLS AFTER THEY ARE ON OVEN RACK WITH A LADLE, DIPPER ETC. IT HELPS PREVENT SPILLING.
