What a strong memory this pie brings back of all that wonderful childhood comfort food! You can still find this in some restaurants, such as MCL Cafeteria, but none quite as good as Mother used to make!

Ingredients

4
eggs, slightly beaten
1/2 c
sugar
1/4 tsp
salt
1/2 tsp
vanilla extract
2 1/2 c
milk, scalded
1
9" unbaked pastry shell
ground nutmeg

Step-By-Step

1In a medium to large pan, bring milk to just below the boiling point--tiny bubbles will begin to form at the edges.
2While milk is heating, blend eggs, sugar, salt, and vanilla in a large bowl. Gradually stir in the scalded milk.
3Pour into unbaked pastry shell. Sprinkle with nutmeg.
4Bake on center rack in 350-degree oven for 35 to 40 minutes, or until knife inserted near center of pie comes out clean.
5Cool pie on wire rack; then chill.
6NOTE: An alternative topping: instead of nutmeg, sprinkle with 1/2 cup flaked coconut.
