This was my very first pie I ever made. I didn't think it came out good but it was the first pie to go that night. So I did a good job. My older sister always asks me to make it when we have a family get together.
1In a large bowl beat the first ingredients until small peaks form. making sure not to over beat egg whites. In a saucepan on low heat mix together the next 2 ingredients until it becomes thick. Then take off the heat & let cool. After it has cooled add in the gelatin, water & mix together. Then add into the bowl with the egg whites mix. Then add in the nuts. Fold well making sure not to over mix or eggs whites will fall. Then take the shortbread cookies & crushed them up & press them into a pie pan. Place in the pie crust & let sit in the refrigerator for about 4 hours. You may use raw shortbread cookie dough for this. Just roll it out press it into a pie pan & bake for 8 to 10 minutes.
2Note: My recipe calls for Macadamina Nuts. I know you may not be able to find them every where. So you may use any nut you would like. You can make this pie as the recipe says & the next time you can use what ever nut you wish. If you do end up using something else I would love to hear what you added or took out. I'm sure which ever way it will turn out great.
