Miss Becky's Blueberry Beauty

This is my home-made blueberry pie, full of fresh blueberries. I combined a number of different recipes and then added a few of my own ingredients (although i keep those special extras to myself). I did not make the pie crust since i was crunched on time, so i used the BEST pie crust: Marie Callender frozen pie crust...however we all know there is nothing like a homemade crust. I recommend also trying it with a graham cracker crust! The key is BIG, FRESH, JUICY blueberries! Serve with some ICE COLD watermelon and you've got some satisfied southerners'.

Ingredients

1
frozen pie crust (or your own crust)
4 c
fresh blueberries
7 Tbsp
cornstarch
2 Tbsp
lemon juice
1/2 tsp
cinnamon (although i do a little more)
1/4 tsp
allspice
2/3 c
sugar (but my family likes it sweet so i do a whole cup)
3 Tbsp
water
1/3 c
all purpose flour
1/3 c
old fashioned oats
1/4 c
sugar
3 Tbsp
butter, melted
dash(es)
cinnamon
1
eggyolk

Directions Step-By-Step

1
Preheat oven to 375. Brush crust with egg yolk.
2
combine 2/3 cup sugar (although i do a full cup since my family likes their pie sweet), cornstarch, cinnamon, and allspice in a bowl.
3
add lemon juice and water to dry ingredients and mix (will be crumbly).
4
Wash and dry blueberries and throw them into the pie crust (dont worry if it looks too full, they will all mesh together).
5
pour the liquid ingredients over the blueberries.
6
in a small bowl, combine flour, oats, sugar, melted butter, and a dash of cinnamon. Sprinkle evenly over blueberries.
7
bake 50-60 minutes. Enjoy! Serve with ice cold watermelon and you've got some satisfied southerners!
