Maw Maw's Pumpkin Pie

This is the best pumpkin pie I have ever tasted. It is rich, delicious and addictive! Serve with a dollop of fresh whipped cream or a scoop of vanilla ice cream to send it right over the top!

Ingredients

8 oz
cream cheese, room temperature
2 c
canned pumpkin pie mix
1/2 stick
unsalted butter, melted
1 c
brown sugar, lightly packed
1 c
evaporated milk

egg

egg yolks
1 tsp
vanilla extract
1/2 tsp
cinnamon, ground
1/4 tsp
freshly grated nutmeg
1/4 tsp
ginger, ground

store bought deep dish pie crusts

Directions Step-By-Step

Preheat oven to 350 degrees Fahrenheit.

With a hand mixer cream together cream cheese, brown sugar, spices, vanilla extract and melted butter.

Add 1 cup evaporated milk and 2 cups of canned pumpkin, mix thoroughly.

In a separate bowl whisk one whole egg and two egg yolks, then add to pumpkin mixture and beat thoroughly.

Scrape down the sides of the bowl with a rubber spatula and make sure that all ingredients are incorporated.

Divide mixture evenly between two deep dish pie crusts. I use a ladle and fill the shells one ladle at a time to make sure that they are perfectly even.

Place pies in the oven and bake for 50 minutes, then allow pies to cool completely on the counter and then store in the refrigerator.
