Maman Claudette use to make this dessert over and over because of all the request. I watched her make it time and time again. It take lots of effort to make but Maman never was afraid to put all of her heart in ANYTHING SHE WOULD DO.
Today she is 78.
She had been my life!!

Ingredients

2 large
egg whites
1/4 tsp
cream of tartar
3/4 c
sugar
12 oz
strawberries, fresh
2 c
heavy whipping cream

SHORTBREAD CRUST

2 c
flour
1/2 c
powdered sugar
2 Tbsp
cornstarch
1/4 tsp
salt
3/4 c
butter

Directions Step-By-Step

Whip the eggs and cream of tartar until soft peaks form. Add sugar gradually and beat until sugar is dissolved then add the strawberries in gradually and whip on high for about 3-5 minutes but use your common sense(like my mother always did)you will see when it is all whipped.

Whip the heavy cream until peaks form then fold in the strawberries mixture. Pour into the crust.
Freeze.
An hour before serving put in the refrigerator.It will be perfect to cut.
Now to make is very festive my mother would put sliced strawberries that have been macerated in liquor. 2 cups of slice strawberries for one cup of water 4 TBS of sugar and 1/3 cup of liquor.
Pour the syrup over the fruits and let it macerate in the refrigerator for 4 hours.

Preheat oven at 325 degrees.
Grease a pie plate.
In a bowl combine flour, sugar, cornstarch and salt.
Add butter and mix until it makes coarse crumbs.
Press mixture into prepared pan.
Bake 15 to 18 minutes or until golden brown.
