Serves:

8 slices

Cook:

1 Hr

Ingredients

1 lb
sweet potatoes, cooked
1/2 c
butter, softened
1/2 c
sugar
1/2 c
brown sugar
1/2 c
milk
2
eggs
1/2 tsp
nutmeg
1/2 tsp
cinnamon
1 tsp
vanilla
1
9" unbaked pie crust

Directions Step-By-Step

1
Peel & then break up sweet potatoes in large mixing bowl. Add the soft butter & mix well with mixer until blended.
Stir in all other ingredients & then beat with mixer until smooth.
Pour into unbaked pie shell & spread to edges.
Bake @ 350 for 55-60 minutes, until a knife inserted into center of pie comes out clean.
If the pie crust edges begin to get too brown you may want to cover with tin foil on the edges only.
Mine came out great but all ovens cook differently so you may want to keep an eye on yours.
The pie will puff up and then sink once it begins to cool, so don't freak out...it's all good!!
Enjoy! Simple & great!!
