This pie is so easy and so very yummy. Every time I take it to a function, I bring home an empty dish.

eggs
1/2 stick
margarine or butter, melted and cooled

granulated sugar
2 c
milk
1 tsp
pure vanilla extract
1/2 c
bisquick or other baking mix
1 c
coconut

Directions Step-By-Step

Put all ingredients, except coconut, in a blender and blend on slow for about 3 minutes.

Pour into a greased 8" pie plate. Let set for 5 minutes, then sprinkle coconut on top.

Bake at 350 degrees for approximately 35-40 minutes until golden brown and firm in the center.

Hint: You can blend the coconut with the other ingredients or sprinkle on top. It is delicious either way.

Coconut Pie Bars: To make this recipe into bars, just double the recipe and pour into a greased 9 x 13 dish. Bake approximately 55-60 minutes, checking after 45 minutes. Bake until golden brown and firm in center.

    I made this recipe because I like the fact it uses an 8" pie plate, but upon carefully measuring ingredients and blending there was too much liquid!! All fit nicely in a 9" pie plate.

    I didn't notice the 8" pie plate or would have changed because I ran into the same problem. I have made this many times and always have used a bigger pie pan.
