This is a wonderful easy New Zealand dessert.

Serve hot or cold.

May be served with fruit, jello, whipped cream or ice cream.

Ingredients

4 large
eggs
1/2 c
flour
1 c
refined sugar
2 tsp
vanilla extract
4 oz
soft butter
1 c
coconut ( shredded or grated and dry)
2 c
milk
1/4 tsp
ground nutmeg (optional)

Directions Step-By-Step

Grease 9 inch pie dish

Into a bowl mix together for four minutes, the eggs, flour, sugar, vanilla and butter.

Add milk and coconut, mix until all is combined.

Pour the mixture into the pie dish and sprinkle with nutmeg if desired before baking

This pie forms it's own pastry, filling and crust as it bakes.

Bake on 2nd top shelf of oven preheated to moderate (325 degrees F)

Make sure the center of the pie is set before removing from oven, if not, allow a little longer.
