My friend, who is Greek, gave me a recipe that was good, but i wanted to make it different, so I did. She loved it and said it was easier to make.

Ingredients For hearty spinach pie

  • 1/2
    of a 17.3 oz pkg, ( 1 sheet,) puff pastry sheets.
  • 2 Tbsp
    butter
  • 1 c
    frozen sliced carrots, thawed.
  • 1
    10 oz pkg frozen spinach, thawed, squeezed dry
  • 1
    pouch dry onion soup mix
  • 1/4 tsp
    pepper
  • 4
    eggs, beaten
  • 1 c
    low-fat whipped cottage cheese
  • 1 c
    reduced-fat, crumbled feta cheese.

How To Make hearty spinach pie

    Heat oven to 375. Spray a 9"- springform pan w/ cooking spray. Heat butter in lg skillet, over medium heat. Add carrots, cook 4 min, stirring often. Stir in spinach, soup mix, and pepper. Cook until spinach is tender. Remove pan from heat. In lg bowl, beat eggs, cottage cheese and feta cheese. Stir in spinach mix. Unfold pastry on floured surface, rollout to a 12"-square.Press pastry into bottom and up sides of pan, overlapping the top. Spoon filling into pastry. Fold excess pastry over filling. Bake 45 min, or until set.
