granny's mock pecan pie

My grandmother-in-law gave this recipe to me back in 1978. Years that pecans are just too expensive (like THIS year - 2011) I like to make this pie. It tastes like the real deal and is perfect for those with nut allergies or to serve on April Fool's Day!

Ingredients For granny's mock pecan pie

  • 2
    eggs
  • 3/4 c
    sugar
  • 2/3 c
    butter, melted
  • 3/4 c
    maple syrup
  • 2 tsp
    vanilla extract
  • 3/4 c
    quick cooking oats
  • 2/3 c
    coconut, flaked
  • 1/2 tsp
    salt
  • 1
    unbaked pie shell

How To Make granny's mock pecan pie

    In a bowl combine all of the ingredients together and pour into the pie shell.

    Set the pie on a baking sheet (this helps conduct heat to the bottom of the pie and crisp it up. A trick I learned from Granny).

    Bake for 15 minutes in a preheated 400*F oven then reduce heat to 350*F and bake 30 minutes longer.

    Loosely cover top with foil if it is getting too dark but should be okay. Everyone's oven is a little different. Enjoy!!
