Gail's Story

This recipe belonged to 94 year old Iaeline Jackson. She was the grandmother of a co-worker of mine. My husband's mother's maiden name was Jackson so I'm adopting Mrs. Iaeline into our family as Grandma. She has been making this pie for her family many many years.

Ingredients

1 1/2 c
sugar
1/3 c
all purpose flour
1/4 c
cocoa, unsweetened
3 large
egg yolks, beaten
2 c
pet milk (evaporated) or milk
1/2 stick
butter
1
pie shell, baked
MERINGUE
3 large
egg whtes
3 Tbsp
sugar
1/8 tsp
cream of tartar or baking powder
NOTE: I LIKE TO USE 4 EGG WHITES, 6 TABLESPOONS (1/3 CUP) SUGAR, 1/8 TSP CREAM OF TARTAR AND A TSP VANILLA TO MAKE THE MERINGUE,

Directions Step-By-Step

Put all ingredients (for pie filling) in saucepan and cook until thickened and bubbly. NOTE: I mix beaten egg yolks and milk together in saucepan then add dry ingredients and butter.and whisk until bubbly and thickened.

Pour into pre-baked pie shell.

Make meringue by beating egg whites until stiff. Add sugar, one tablespoon at a time. Add cream of tartar or baking powder (and vanilla if desired). Beat until stiff.

Put on top of pie and bake 5-10 minutes or until lightly brown. Cool on wire rack.

Ok, this is another chocolate cream pie recipe that I failed!!! It is very close to my grandma's recipe that I use to make with her supervision as a child. I don't know why I can't do these. They always come out soupy. Please tell me what I'm doing wrong. I follow the instructions to a tee. I'm so sad.
