Gail's StoryThis recipe belonged to 94 year old Iaeline Jackson. She was the grandmother of a co-worker of mine. My husband's mother's maiden name was Jackson so I'm adopting Mrs. Iaeline into our family as Grandma. She has been making this pie for her family many many years.
1 1/2 c
all purpose flour
egg yolks, beaten
pet milk (evaporated) or milk
pie shell, baked
cream of tartar or baking powder
NOTE: I LIKE TO USE 4 EGG WHITES, 6 TABLESPOONS (1/3 CUP) SUGAR, 1/8 TSP CREAM OF TARTAR AND A TSP VANILLA TO MAKE THE MERINGUE,
1Put all ingredients (for pie filling) in saucepan and cook until thickened and bubbly. NOTE: I mix beaten egg yolks and milk together in saucepan then add dry ingredients and butter.and whisk until bubbly and thickened.
3Make meringue by beating egg whites until stiff. Add sugar, one tablespoon at a time. Add cream of tartar or baking powder (and vanilla if desired). Beat until stiff.
