frozen 9-inch deep dish pie crust
freshly grated nutmeg
Heat oven to 450 degrees F.
Place chopped rhubarb in frozen pie crust, spread evenly on bottom. Set aside.
In a large bowl, combine the sugar, flour and nutmeg.
Add the eggs and melted butter. Mix well.
Pour egg mixture evenly over rhubarb. (Mixture will be thick.)
Bake at 450 degrees F. for 10 minutes. Reduce heat to 350 degrees F. and bake 30-35 minutes longer
Remove from oven and cool. Store leftovers in refrigerator.
