Ingredients

CRUST:
1 c flour
1/4 c brown sugar, firmly packed
1/2 c chopped pecans
1/2 c melted butter

1 c sugar
2 Tbsp corn starch
1 c cold water
2 qt fresh strawberries
1/4 c strawberry gelatin (dry)
1-2 drops red food coloring

Vivian's Notes:
This is a recipe I got from my Mother..... I remember her making this a lot during the summers. I just recently ran across it and served it at one of our family dinners. They scraped the dish clean. We all love strawberries, but the nutty crust was the highlight.

Directions:

Crust:
combine and spread into a 9"x13" dish.
Bake 250* 15-20 min or til starts to get a golden color. Breaking dough several times with a fork while baking. Cool completely

Filling:
Combine sugar, corn starch and cold water in a saucepan. Cook slowly until thick and clear. Stir in gelatin and food coloring. set aside to cool while preparing strawberries.
Arrange fresh berries on cooled crust.
Pour cooked mixture over berries and chill several hours.
Top with whipped topping to serve.

Vivian, when using fresh strawberry's go you keep them whole or cut them up? Have you ever done this with frozen berries?

Hi Nancy, I have done it both ways. The kids have an easier time eating it if I slice the berries. Fresh berries are better. They are firmer and less liquid, but drained well, frozen ones can be used.

Thanks so much Vivian, I was just thinking of the endless possibilities with out of season fruit during the winter:)Maybe I would drain frozen berries, over night in the frig.

This summer I got alot of strawberries and canned some and also have some in the freezer and this old girl is saving this recipe for winter time to make with those strawberries. Thanks for another good sounding recipe. I think my recipe box is overflowing with good eats!!

I think, black berrys, huckleberrys, any berry would be great in this just change up the jello somewhat or not. My Mom used to make this Orange Apricot Ring thing for Thanks Giving. I will post it soon, it calls for lemon lime soda in it and it is so good when you eat it because you can feel the carbonation in your mouth. She passed away 7 years ago but that recipe will never die. I also thought about putting berries in that too. Look for my post.

Nancy, Be sure and let me know how it is with other berries. The recipe that's fizzy in your mouth sounds fun. The grandchildren will love that.

Ha ha, ladies I am 63 years old. I have ten grandchildren and four great granchildren. My oldest son married at 18 years old and right off the bat had three children by the time he was 21. My grandkids are having babies now. they are all just beautiful. I feel very blessed to have such a large and wonderful family. The fact that I love to cook for my grandbabies and great grandbabies makes it all the better. LOL
