- CRUST

1/2 cunsalted butter

1/4 tspsalt

1 3/4 cflour

4-5 Tbspcold water
- FILLING

12 ozevaporated milk

4eggs

1 tspvanilla

1 csugar
How To Make filipino egg pie

1Cut butter into flour until pea-sized. Add salt. Add cold water until a little sticky. Chill dough 15 minutes. Roll out to correct circle size and place in pie pan. Make a pretty edge.

2Preheat oven to 400 degrees. Poke holes in bottom. Line with waxed paper and pour in rice to weight down. Cook 12-15 minutes.

3Heat milk in microwave about 2 minutes. Don't boil. Separate 2 eggs, reserving whites. Add 2 whole eggs and 2 yolks to a bowl. Add sugar while stirring. Stir in scalded milk.

4Beat egg whites with electric mixer until stiff. Fold egg whites into egg/milk/sugar mixture. Pour into pie crust.

5Bake at 350 degrees about 15 minutes. Lower heat to 325 and bake 30-35 minutes until golden brown. Cool before serving.
