Fall Yam Pie

I personally like to bake my sweet potatoes ahead of time rather than use canned ones. Wanting more zing than a regular sweet potato pie I added the ginger. Sometimes I will add 1/4 tsp. of cardamom too! The three extracts are a huge hit with family and friends too. The scents while baking are heavenly!

Ingredients

9-inch pie crusts
3 c
mashed cooked sweet potatoes
1 stick
butter, melted
4
eggs, beaten
1 c
brown sugar
1 c
white sugar
1 can(s)
16 oz. evaporated milk
1/2 tsp
salt
1 tsp
ginger
1 1/2 tsp
cinnamon
1/2 tsp
nutmeg
1 tsp
lemon extract
1 tsp
orange extract
1 tsp
pure vanilla extract

Step-By-Step

1In a large bowl, blend all ingredients with an electric mixer.
2Pour into pie shells.
3Bake in preheated 350 degree oven 40 minutes or until center is just about firm.
