eloise's pecan pie

This recipe was my mother in law's recipe. It is not your typical pecan pie in that you do not use syrup in it. It is so good though! She passed away suddenly in 2006 and I have been asked, by my husband & his siblings, to bake this pie every Thanksgiving & Christmas. It is an honor to do so. I think about my sweet mother in law each time! Enjoy!

Ingredients For eloise's pecan pie

  • 1/2 c
    softened butter
  • 1 c
    sugar
  • 1 tsp
    vanilla flavoring
  • 1 c
    chopped pecans
  • 2
    eggs, whites separated from yolks
  • 1
    unbaked pie shell

How To Make eloise's pecan pie

    Preheat oven to 350 degrees
  • 2
    Cream butter & sugar together.
  • 3
    Add vanilla & egg yolks.

    Stir in pecans.

    In separate bowl, beat egg whites until stiff.
  • 6
    Fold whites into other mixture.

    Pour into unbaked pie shell & bake about 45 minutes.
