Easy Vanilla Cheese Pie

This is an awesome, easy recipe. If you don't think you're eatin' cheesecake, well then, ya done somethin' wrong.

If you substitute sugar with Splenda(or your choice of sugar substitute)and use Nuefatchel Cream Cheese(or 1/3 less fat)you still get all the great taste....just fewer calories!

cream cheese, room temperature
1/2 c
2 large
eggs, room temperature
1 Tbsp
vanilla extract
1 tsp
lemon juice(optional)
ready made crust(i use keebler's shortbread crust)
fruit topping of your choice(optional)

Directions Step-By-Step

Pre-heat oven to 300.

In medium mixing bowl, blend together the sugar and cream cheese to a smooth consistency. Add eggs one at a time. Blend until smooth. Add vanilla and lemon juice. Mix just 'til all are combined. Pour into the pie crust and place in oven on middle rack. Bake for 1 hour. Cool for 1 hr. at room temperature. Chill for 1 hr. Serve plain or top with your favorite fruit. Mmmm...so good!
