This is a recipe that is great for when you need a quick, no mess, dessert. I actually started this recipe when our chickens went into laying overload! I didn't have a crust prepared and wasn't in the mood to make one.
In a blender, combine milk, sugar, eggs, vanilla, flour, butter, and salt. (Do not melt butter. Cold is fine). Cover and blend.
Add coconut and blend for 10 seconds or until all ingredients are blended. Spray a 10 inch pie plate with nonstick cooking spray. Pour into the pie pan. Top with a handful of coconut and grated nutmeg.
Bake at 350 for 50-55 min. Insert a knife in the center, and if it comes out clean the pie is done! This pie can be served warm or cold!
