Dan's Favorite Key Lime Pie

My husband loves this recipe, and it was his favorite, when I first wrote my cookbook, SHARING OUR FAVORITE RECIPES, a few years ago. I have since created a double layer Key Lime Pie/Cheesecake Recipe recipe which he likes even more. I will share that recipe with you at another time. But this one is simple and easy, and not too many steps, and it looks like you worked for hours making it.That's why I used it as my cover photo. I did not include the extra chilling time in the prep time to make.It is a very impressive looking dessert. I made one for my neighbor when she first moved in years ago,
-8 ounce cream cheese, softened
14 ounce sweetened concensed milk
limeade concentrate, thawed
drops green food coloring, optional
frozen whipped topping, thawed
small mandarin orange segments, drained
ripe kiwi fruit, peeled & sliced thin
maraschino cherry halves
extra serving size graham cracker crust
DAN'S FAVORITE KEY LIME PIE
1Beat Cream Cheese and condensed milk in a mixing bowl until smooth.
2Add limeade and food coloring if desired.
3Fold in half of whipped topping.
4Pour mixture into crust.
5Cover and refrigerate for 2 hours.
6Top with remaining whipped topping.
7Garnish with kiwi fruit, maraschino cherries, and mandarin orange segments.
8Return to refrigerator and chill for at least 4 hours or over night
