Rose Mary's Story

My husband loves this recipe, and it was his favorite, when I first wrote my cookbook, SHARING OUR FAVORITE RECIPES, a few years ago. I have since created a double layer Key Lime Pie/Cheesecake Recipe recipe which he likes even more. I will share that recipe with you at another time. But this one is simple and easy, and not too many steps, and it looks like you worked for hours making it.That's why I used it as my cover photo. I did not include the extra chilling time in the prep time to make.It is a very impressive looking dessert. I made one for my neighbor when she first moved in years ago,

Ingredients

1 pkg
-8 ounce cream cheese, softened
1 can(s)
14 ounce sweetened concensed milk
3/4 c
limeade concentrate, thawed
4
drops green food coloring, optional
12 oz
frozen whipped topping, thawed
1 can(s)
small mandarin orange segments, drained
2
ripe kiwi fruit, peeled & sliced thin
12
maraschino cherry halves
1
extra serving size graham cracker crust
DAN'S FAVORITE KEY LIME PIE

Directions Step-By-Step

Beat Cream Cheese and condensed milk in a mixing bowl until smooth.

Add limeade and food coloring if desired.

Fold in half of whipped topping.

Pour mixture into crust.

Cover and refrigerate for 2 hours.

Top with remaining whipped topping.

Garnish with kiwi fruit, maraschino cherries, and mandarin orange segments.

Return to refrigerator and chill for at least 4 hours or over night

Jean I assume you are asking for a graham cracker crust without the nuts. The recipe I use is from the Graham cracker crumb box, nothing fancy, it is used in my Strawberry Yogurt Pie Recipe. STRAWBERRY YOGURT PIE, this is the one I usually use if I am putting it in a springform type pan. Sometimes I use Oreo cookies, or Vanilla wafers like in the Fudge Truffle Turtle Cheesecake or the Chocolate Chip Chsecake/Fudge Truffle Topping or vanilla wafers in my Chocolate Irish Cream Cheesecake You can also google for a basic Graham Cracker crust.

Diane thank you for your comments. The cover picture that you see is by a Just a Pinch Member Genny Rose, she made it and submitted her picture, and I let it remain as the feature Pix. My picture is in the smaller pictures underneath. I made this recipe for a Newspaper Photo shoot. It is a very cool and refreshing dessert, and so easy to make. I am confident that your family will love it. Especially when you realize how easy it is to make. Especially refreshing during the summer months, but great all year long.
