Ingredients For creamy mallow cheesecake

  • CRUST:
  • 1 c
    vanilla wafer crumbs
  • 1/4 c
    margarine,melted
  • FILLING:
  • 4 c
    kraft mini marshmallows
  • 1/2 c
    milk
  • 2 pkg
    (8 oz. each) cream cheese
  • 2 Tbsp
    lemon juice
  • 2 Tbsp
    grated lemon rind
  • 1 tsp
    vanilla extract
  • 1 c
    heavy cream , whipped or (8 oz. cool whip thawed)

How To Make creamy mallow cheesecake

    Crust: Combine crumbs and margarine; reserve 1/4 cup. Press remaining crumbs onto bottom of the 9-inchspring formm pan.

    Filling: Melt marshmallows with milk in saucepan over low heat; stir occasionally until smooth. Chill until slightly thickened; mix until well blended. Combine softened cram cheese, lemon juice, rind and vanilla, mixing at medium speed on electric mixer until well blended. Beat in marshmallow mixture; fold in whipped cream. Pour over crust; sprinkle with reserved crumbs. Chill.
