Ingredients

1 pkg (8oz.) cream cheese
1/3 c sugar
1/4 tsp salt
1 tsp vanilla extract
1 egg
1 unbaked pie shell
1 c corn syrup
1 tsp vanilla extract
3 eggs, beaten until blended
1/4 c sugar
1 1/4 c pecans, chopped

susan's Notes:

I got this recipe 27 years ago when I was first married from Faye Duman, my boy's Grandma's neighbor in Eugene Oregon. Faye was one of the best cooks I know and her desserts were second to non; this was Faye's favorite pecan pie.

 

Directions

Combine 8oz.cream cheese, 1/3 cup sugar, 1/4 tsp. salt, 1 tsp. vanilla and one egg. Cream well and pour into a unbaked pie shell.

Blend together in medium mixing bowl, 1 cup corn syrup, 1 tsp. vanilla, 3 beaten eggs, and 1/4 cup sugar.

Add 1 1/4 cup pecans.

Pour on top of first mixture.

Bake at 375 degrees close to an hour.

I stumbled onto this recipe at Christmas several yrs ago. Since then, it has become a have to dessert. I had a 50 person gathering and needed something a bit different. I decided to make this pie. I took 2 pie crust and shaped them to fit a jelly roll pan with sides. press to make crust go up sides. Double the cream cheese filling, pour over crust. DO NOT DOUBLE the syrup mixture, add 2 Cups pecan pieces. Pour over Cream cheese filling. Bake at 350 for 45 minutes or until set. As usual, ovens vary, so watch for browning and "giggling", as normal for pecan pie. Once I gilded the Lily, melting semi sweet choc chips and drizzling on top.....Love this easy recipe.
