I created this recipe because I had fresh cranberries left over from Thanksgiving and did not want them to spoil. I had never made my new concoction before, but was pretty confident that it would work out. I was right, and my husband really loved the nice serving that I made for him with his favorite vanilla ice cream. I too was impressed with the tart flavors of the cranberries combined with the spices, and the crunchy nutty topping sent this dish over the top. I will be making it again real soon, and I used splenda in parts of the recipe to make it lower in sugar. Just amazing & quite tasty.

Ingredients For cranberry apple crisp w/splenda

  • 24 oz
    fresh cranberries,chopped in food processor
  • 5 lg
    granny smith apples,washed,peeled,cored & sliced
  • 1 3/4 c
    splenda granular
  • 2 tsp
    cinnamon
  • 1 tsp
    nutmeg
  • 1 1/2 c
    all purpose flour
  • 1 c
    quick cooking oats
  • 1 1/3 stick
    butter
  • 1 c
    brown sugar blend
  • 1 tsp
    cinnamon
  • 1/2 c
    chopped nuts, optional

How To Make cranberry apple crisp w/splenda

    PREHEAT OVEN TO 375 DEGREES F. Then spray a 9X13X2 inch size casserole dish with non stick cooking spray and set aside till needed.

    Wash,peel, core & slice apples and add to a large bowl.Wash & Pick through cranberries for bad ones then add to apples, and mix together.

    In a medium size bowl, Combine splenda granular with 2 teaspoons cinnamon & nutmeg, then mix together and sprinkle over apples and cranberries and toss to blend together. Then spread evenly into prepared baking dish.

    In a medium bowl add flour, oats, brown sugar blend, butter, cinnamon & nuts if using. blend together until mixture is crumbly, then sprinkle evenly over fruit mixture.

    Place in preheated 375 degree oven and bake for 1 hour, until top is golden brown and fruit is oozing from sides of pan.

    Serve warm or at room temperature.

    Add your favorite ice cream or whipped topping and enjoy.
