My husband's very favorite pie is coconut pie. I found this recipe in the old Peterman cookbook that I purchased at the festival and decided to keep this recipe because it was good, easy to make and my husband especially liked it.
Heat milk to boiling point. Add yolks, sugar, salt and coconut together. Add a little of the hot milk to the egg mixture, stir well, then pour into boiling milk stirring constantly. Cook until thick. Place in baked pie shell. Beat egg whites with 3 tablespoons sugar until stiff and pile on top of pie. Bake in oven 350 degrees until light brown. I also sprinkled a little coconut on top before baking it.
