Chocolate Chess Pie

The pie from Angus Barn restaurant in Raleigh, North Carolina, made such a big hit with the test kitchen at the L.A. Times and readers that we decided to include it among our favorite recipes here.

Ingredients

3/4 cup butter
1 1/2 squares unsweetened chocolate
1 1/4 cups sugar
1/4 cup light corn syrup
3 eggs, lightly beaten
1/8 tsp. salt
1/2 tsp. vanilla
1 unbaked pastry shell, 9 inches

Directions Step-By-Step

Mix butter and chocolate in top of double boiler. Melt over boiling water. Mix sugar, syrup, eggs, salt and vanilla. Blend sugar mixture into butter mixture and turn into pastry shell. Bake at 375 for 35 minutes or til set.
Serves 6 to 8
