Apple pie in a bite-sized form ... delicious! Now, these apple pies may look a little messy and crumbly, but wow they are so good. The gingersnap crust has the perfect crunch with a mix of spice and buttery flavor. The crust just crumbles and melts in your mouth at the same time. Sauteed apples add a small burst of flavor when you bite into the pie. We highly suggest making the homemade apple pie spice. The combination of flavors is great. The cardamom has a strong, spicy flavor that works well with cinnamon and nutmeg. Gooey and sweet, the caramel sauce on top is wonderful and addicting on its own. No one will be able to resist these adorable apple pies.

Ingredients For bite-size apple pies

  • HOMEMADE APPLE PIE SPICE
  • 1 Tbsp
    ground cinnamon
  • 1 tsp
    ground nutmeg
  • 1 tsp
    allspice
  • 1 dash
    cardamom (optional)
  • BITE-SIZE APPLE PIES
  • 2 c
    gingersnaps crumbs
  • 8 Tbsp
    melted butter
  • 4 c
    apples
  • 1/4 c
    brown sugar
  • 1/3 c
    sugar
  • 1/2 tsp
    ground cloves
  • 1 tsp
    apple pie spice
  • 1 tsp
    salt
  • 2 Tbsp
    plus 3/4 tsp all-purpose flour
  • EASY CARAMEL SAUCE
  • 1 c
    brown sugar
  • 1/2 c
    half and half
  • 4 Tbsp
    butter
  • pinch
    salt
  • 1 Tbsp
    vanilla extract

How To Make bite-size apple pies

  • Apple spice ingredients in a small bowl.

    To make apple pie spice, place all ingredients in a small, resealable container and mix them together. Use as directed in recipes that call for apple pie spice. Store in a dry place for up to 6 months.
  • Gingersnap crumbs and butter combined in a bowl.

    For the apple pies, in a bowl mix gingersnap crumbs and butter until well combined.
  • Crumb mixture poured and press into muffin tins.

    With a spoon or melon ball scoop, place the mixture into a muffin cup pan and press the crust to fit inside.
  • Baking the gingersnap crust.

    Bake at 350 for 5 minutes. Dice apples to make 4 cups.
  • Apple chunks processed in a food processor.

    Place into a food processor and slowly pulse to make apple bits.
  • Apples, flour, spices, and sugars in a saucepan.

    Place apple bits in a saucepan. Add brown sugar, sugar, apple pie spice, ground cloves, salt, and flour. Stir.
  • Apples cooking in a saucepan.

    Cook apples down over medium heat.
  • Cooked apples poured into gingersnap crust.

    Take the cooked apples and spoon them into the crust. Bake at 350 for 10 minutes. Let cool.
  • Brown sugar, half and half, butter, and salt in a saucepan.

    Caramel Sauce: Mix the brown sugar, half and half, butter, and salt in a saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes until it gets thicker.
  • Adding vanilla extract.

    Add the vanilla and cook another minute to thicken further.
  • Caramel sauce in a jar.

    Turn off the heat, cool slightly, and pour the sauce into a jar. Refrigerate until cold.
  • Bite-Size Apple Pies with caramel sauce drizzled over.

    Drizzle caramel on top of cooled apple pies.
