1Preheat oven to 350° F. Pie dough: mix sugar,salt, and flour in a bowl.
2Take butter and cut into flour mixture with a pastry cutter. Do this until it turns into pea size.
3Add water slowly and knead into dough until moistened. (you may not use all of the water so don't add all at once) Knead until a dough is formed. Wrap and refrigerate until firm or overnight.
4On a floured table roll out dough into a 8-9 inch pie tin. ( I spray my tin before placing dough into it) roll dough into it and make a nice crust, cut off any extra hanging over the edge.
5Take fork and dock dough ( put tiny holes) in bottom of crust so it doesn't puff up when baking. Let crust rest. (you can wrap and refrigerate if you want)
6In a bowl combine sliced apples, butter,cinnamon,nutmeg,tapioca, vanilla extract, and sugar. Pour into pie crust and pat down so all is even.
7To make topping: In a bowl combine flour,cinnamon,brown sugar, and oats. Cut in butter with a pastry cutter until mixture is crumbly.
8Take the crumble and evenly spread it over apples making sure to cover all the apples.
9Place pie on a sheet pan and place in oven for an hour. (Until the top is light brown and inside apples are soft: test with knife in center of the pie)
10Let cool, cut and serve. Enjoy!
