Ingredients

1 Tbsp
unflavored gelatin (1 envelope)
1/2 c
sugar
1/4 tsp
salt

egg yolks
1/2 c
lime juice
1/4 c
water
1 tsp
grated lime peel
few drops green food color

egg whites
1/2 c
sugar
1 c
heavy cream, whipped
1
9 inch pastry shell
1/4 c
pistachio nuts, chopped
lime slices for garnish
heavy cream, whipped, to top

Step-By-Step

1Thoroughly mix gelatin, 1/2 cup sugar and salt in saucepan.
2Beat together egg yolks, lime juice and water; stir into gelatin mixture.
3Cook and stir over medium heat just until mixture comes to boiling.
4Remove from heat; stir in grated peel.
5Add food coloring sparingly to tint pale green.
6Chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon.
7Beat egg whites until soft peaks form; gradually add 1/2 cup sugar, beating to stiff peaks.
8Fold gelatin mixture into egg whites.
9Fold in whipped cream.
10Pile into cooled baked pastry shell.
11Chill until firm.
12Spread with more whipped cream; edge with grated lime peel.
13Sprinkle chopped pistachio nuts in center.
14Garnish with thinly sliced lime placed in whipped cream mounds around edge of pie.
