amazing coconut pie

Can't remember where I got this recipe but I've made it often for the past 25 yrs whenever I need to make a quick dessert. No need for pie crust it makes its own! The coconut can be left out to make a simple custard pie (I sometimes sprinkle just a little sugar on top to brown).

Ingredients For amazing coconut pie

  • 2 c
    milk
  • 3/4 c
    sugar
  • 1/2 c
    biscuit mix
  • 4
    eggs
  • 1/4 c
    butter
  • 1 1/2 tsp
    vanilla
  • 1 c
    coconut, flaked

How To Make amazing coconut pie

    Combine milk, sugar, biscuit mix, eggs, butter and vanilla in blender. Blend on low speed for 3 minutes.

    Pour into greased 9 inch pie pan. Let stand 5 minutes then sprinkle with coconut.

    Bake at 350 for 40 minutes. Let pie cool down. Serve warm or cold.
