Ingredients For almond tart with lemon curd
- ALMOND SHELL

sweetened whipped cream

1/2 cbutter
-
3/4 clemon juice

3/4 csugar

10egg yolks
- LEMON CURD INGREDIENTS

1 tspvanilla

1egg
-
1/2 cbutter, cut into 1/2 inch cubes

pinchsalt
-
1/2 csugar

1.25 cflour, sifted
-
1/4 calmonds, finely chopped

fresh fruit, cut up
How To Make almond tart with lemon curd

1Mix almonds, flour, 1/2 cup sugar and salt in bowl.

2Rub butter pieces, bit by bit, into flour.

3Stir in egg and vanilla to form ball.

4Chill.

5Roll out onto 12-inch tart pan with removable bottom.

6Weight down with beans placed on waxed paper.

7Bake at 350 until golden, about 20 minutes.

8Cool.

9To make filling, mix egg yolks, 3/4 to 1 cup sugar and lemon juice in top of double boiler.

10Cook, stirring constantly over simmering water, until mixture coats back of metal spoon.

11Do not allow to boil.

12Remove from heat and whisk in 1/2 cup butter, bit by bit, until melted and smooth.

13Pour lemon curd into cooled tart shell.

14Chill until set.

15Remove sides of pan.

16Garnish with whipped cream and fruit.
