Almond Cherry Cheesecake (oven version)

Technically this is not a cheesecake, but a cream cheese pie. This means it is rich, smooth and luscious. Serve with hot coffee for a taste treat.

Ingredients

CRUST

2/3 c
graham cracker crumbs (about 14 squares)
1/4 c
butter or margarine, melted
1/2 c
slivered almonds, broken
1/4 c
sugar

FILLING

8 oz
cream cheese, softened
1/4 c
sugar

eggs
1 c
cherries

TOPPING

1 pt
sour cream
5 Tbsp
sugar
1/2 tsp
almond extract

OPTIONAL GARNISH

slivered almonds
maraschino cherries

Directions Step-By-Step

Preheat oven to 375 degrees F.

Mix crust ingredients and press onto bottom and sides of 9-inch pie pan.

Beat cream cheese and sugar until fluffy.

Mix in eggs until creamy and smooth.

Stir in cherries.

Pour cream cheese mixture into crust.

Bake at 375 degrees F for 20 minutes.

Let pie cool for 10 minutes.

Mix topping ingredients, except almonds.

Pour over pie.
