Vanilla Sugar

Lynette Gibbons

This is great used in coffee, tea, baking, or sprinkled and glazed atop creme brulee. Makes a great finishing touch on top of muffins or sweet breads too!

1 pt
granulated sugar
1 or 2
vanilla beans

1In an airtight jar, place 1 or 2 vanilla beans. I always use the hulls that are left once I've split and scraped the seeds for another use. They still have lots of great flavor and aroma to give!

2Pour sugar into jar over beans. Close tightly and leave sealed for 3 days. Use anywhere you would use sugar: in your coffee, tea, baking, etc., as noted above.

3Once you have used about half the jar, top off the sugar, leave for 3 days, and you will have a replenished stash.
