Make a 6 cup pot of coffee, using 2/3 cup of coffee in the filter and let cool for about 10 mins.
Mix 2 cups whipping cream and 4 tbls sugar and vanilla and whip with mixture into stiff peaks. Then refrigerate until needed again.
Whip marscapone cheese, 1 cup sugar and 2 tbls of the made coffee until smooth. Then fold whipping cream into mascapone mixture.
In a 9X9 dish, put one layer of lady fingers and brush coffee on them until pretty saturated with coffee. Then spread 1/2 the cream mixture on lady fingers and then dust with cocoa powder. Repeat last 2 steps and then refrigerate at least 2 hrs before serving.
