heavy whipping cream
cocoa powder or chocolate shavings for garnish
In mixer with paddle, combine mascarpone cheese, whipping cream, sugar and vanilla.
In separate bowl combine espresso and rum.
Line bottom of glass rectangular dish with lady fingers and soak with the espresso and rum mixture. (I usually spoon onto each ladyfinger until it is soaked through).
Top with the mascarpone mixture.
Place another layer of ladyfingers on top and soak with more of the espresso and rum mixture.
Spread remaining mascarpone mixture making sure to smooth top layer.
Spinkle cocoa powder or chocolate shavings on top.
Store in the refrigerator, best if made at least 1/2 day ahead of serving.
