heavy whipping cream
cocoa powder or chocolate shavings for garnish
1In mixer with paddle, combine mascarpone cheese, whipping cream, sugar and vanilla.
2In separate bowl combine espresso and rum.
3Line bottom of glass rectangular dish with lady fingers and soak with the espresso and rum mixture. (I usually spoon onto each ladyfinger until it is soaked through).
4Top with the mascarpone mixture.
5Place another layer of ladyfingers on top and soak with more of the espresso and rum mixture.
6Spread remaining mascarpone mixture making sure to smooth top layer.
7Spinkle cocoa powder or chocolate shavings on top.
8Store in the refrigerator, best if made at least 1/2 day ahead of serving.
